This week I have a ridiculously easy recipe for you.
In fact, I’m not sure why I didn’t think of it sooner.
When I asked my kids what they wanted to make on our food prep day, it was the usual: cookies, fruit snacks, pancakes, etc… See my Post here on Easy Make Ahead and Freeze School Lunch Ideas.
Then my son mentioned French Toast Sticks. Ummmm, yeah, of course. It’s so easy. Why hadn’t I thought of that?
So I got out my big griddle, a loaf of bread, some eggs, and that’s about it.
I don’t really follow a recipe for this one, but I’ll try to make one here for you. The breads that I recommend are: Ezekiel Bread or any sprouted organic bread, or an organic sourdough bread.
In a shallow dish mix 3 eggs with some almond milk, about 1/3 Cup, again, I just pour and don’t measure. I add about 2 tsp. of vanilla extract and whisk that all up.
I just make more of this egg mixture as I go depending on how much bread I want to use.
Put a piece of bread in the egg mixture to coat, making sure to get both sides. Then put it on a hot pan or griddle. I sprayed mine with this oil before I put the bread on. Then I sprinkle the bread with some cinnamon.
Cook it on both sides until they get lightly golden brown and that’s it. I cooled mine on a wire rack. When they were cool, I stacked them about 3 high and cut them with a knife into 4 equal pieces.
Freeze your French toast sticks in big plastic baggies, with layers of parchment in between so they don’t stick together.
When you’re ready to eat, just take a few out and heat them up in your toaster oven (or microwave if you have to, or in a pan on the stove). I serve them with a little dish of maple syrup for dunking.
If you’re going to be putting these in lunch boxes, just take them out of the freezer the night before and put them in your container in the fridge. They will thaw by morning. Either bring a little container of maple syrup with for dipping, or just drizzle them with a little syrup.
These got a double thumbs up from both of my kids! What more can you ask for?
