Elderberry Syrup
Ingredients
  • 4 Cups water
  • 2 Cups dried elderberries
  • 1 cinnamon stick
  • 1 tsp fresh grated ginger root
  • 1 Cup raw local honey
Instructions
  1. Combine the water, berries, and herbs in a pot and bring to a boil.
  2. Reduce heat and simmer for 30 to 40 minutes.
  3. Remove from heat and mash the berries in the liquid.
  4. Strain the pulp through cheesecloth or a strainer and keep the liquid.
  5. Discard pulp.
  6. Add the honey to the liquid and stir until combined.
  7. Store in a glass jar in the fridge for up to 2 weeks.
  8. Freeze anything you can't use up.
